Black-Eyed Pea Soup
Black-Eyed Pea Soup is an moderately easy dinner. Made with 1 lb. black-eyed peas, 3/4 c. chopped onion, 2 tbsp. butter or oleo, 1 (10 oz.) can chicken broth and 6 c. water, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Sort and rinse peas.
In large skillet, saute onion in butter until tender, but not brown.
Add these both to a large pot. Cover with water.
Add bay leaf, thyme and salt; bring to a boil. Reduce heat, cover and simmer for 1 to 1 1/2 hours, or until peas are tender.
Add tomatoes and meats.
Cover and simmer 30 to 45 minutes more.
Serves 6 to 8 (high fiber).
