Black Beans and Rice
Black Beans And Rice is an impressive dinner. Made with 1/2 c. plus 1/8 c. dried black beans, vegetable cooking spray, 1/2 c. chopped onion, 1/2 c. chopped green pepper and 2 cloves garlic, minced, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Sort and wash beans.
Place in a Dutch oven.
Cover with water 2-inches above beans.
Let soak 8 hours.
Drain.
Coat a Dutch oven with cooking spray.
Place over medium-high heat until hot.
Add onion, green pepper and garlic.
Saute until tender.
Add beans, salt, pepper, chopped tomato, water and vinegar.
Bring mixture to a boil.
Cover, reduce heat and simmer 1 1/2 hours until beans are tender, stirring occasionally.
Add tomato paste.
Cook an additional 15 minutes.
Serve over rice.
Top each serving with tomato, green onions and yogurt.
