Black Bean Medley
Black Bean Medley is an moderately easy dinner. Made with vegetable cooking spray, 1 c. chopped onion, 1/2 c. chopped green pepper, 2 tsp. minced garlic and 2 (15 oz.) cans black beans, undrained, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot.
Add onion, green pepper and garlic; saute until tender.
Add black beans, tomato and rice; stir well. Stir in chopped cilantro and next 3 ingredients.
Cook over medium heat 20 to 40 minutes, stirring occasionally.
Transfer to a serving bowl.
Garnish with fresh cilantro, if desired.
