Billie's Red Hot Cucumber Pickles
Billie'S Red Hot Cucumber Pickles is an moderately easy dinner. Made with 2 gal. large cucumbers, peeled and seeded, 2 c. lime, 1 c. white vinegar, 1 small bottle of red food coloring and 1 tbsp. alum (in water), this recipe delivers authentic, satisfying flavors. Cover cucumbers with water and lime.
Soak for 24 hours in an enamel dish.
Drain and rinse until clear.
Let stand 3 hours in ice water.
Simmer very slowly for 2 hours.
Drain and throw away liquid.
Do not rinse.
Make syrup by combining 2 cups of white vinegar, 2 cups of water, red-hot candies and sugar.
Let boil and pour over cucumbers.
Let stand overnight.
Drain and reheat syrup.
Pour over cucumbers.
On the third morning reheat syrup; pack cucumbers in jars and pour heated syrup over cucumbers to fill.
Store in dark place as light makes the color change.
