Betsy's Muffins
Betsy'S Muffins is an moderately easy dinner. Made with 4 beaten eggs, 1 quart buttermilk, 5 c. flour, 3/4 c. brown sugar and 3/4 c. sugar, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Beat eggs and sugar together.
Add buttermilk and shortening (or oil) and beat.
Mix all dry ingredients (except bran flakes) and beat.
Add bran flakes and stir by hand.
Let stand in covered bowl in refrigerator for 2 days.
Spoon mixture into muffin tins and bake at 400 degrees for 15-20 minutes.
Can keep mix in refrigerator up to 6 weeks.
