Bernadine's Okra Dressing
Bernadine'S Okra Dressing is an moderately easy dinner. Made with 6 to 8 c. sliced okra (if frozen okra is used, 1 qt. size bag), 2 large onions, chopped, 2 large bell peppers, chopped, 2 large tomatoes, chopped or 1 can tomato paste and 1/2 lb. smoked sausage, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cook okra in oil until slime is out.
Saute onion, bell pepper and tomato.
Cut sausage, bacon and ham into small pieces and cook partially.
Drain on paper toweling to remove excess fat.
Cook ground pork or beef until pink color is removed.
Add all ingredients together and cook additional 45 minutes on medium to low heat. Add rice to desired consistency.
Salt and pepper to taste.
