Banana Split Banana Bread
Banana Split Banana Bread is an moderately easy dinner. Made with 1 c. sugar, 1 large egg or egg substitute, 1/2 c. unsalted soft butter, 1 c. mashed ripe bananas and 3 tbsp. milk, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
In large bowl cream sugar, egg and butter with electric mixer until fluffy, about 3 minutes.
Set aside.
In small bowl, mix bananas and milk (to which I add 1 tablespoon vinegar); set aside. Sift together flour, baking powder and baking soda onto paper plate or bowl.
Add dry ingredients to creamed butter mixture alternately with banana mixture, stirring with spatula until all dry ingredients are blended, about 1 minute.
Stir in chocolate chips and pecans.
Spoon into greased and floured bread pan.
Drop pan twice from 6-inch height to countertop to remove air bubbles or let rest 20 minutes before putting into oven.
Preheat oven to 350Β°. Bake 1 hour.
Cool in pan 10 minutes before removing to rack to cool.
Makes 1 loaf.
