Banana Loaf(Diabetic) is an moderately easy dinner. Made with 2 egg whites, lightly beaten, 1 c. bananas, mashed, 1/4 c. sugar, 1/4 c. mazola corn oil and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

In a medium bowl, stir together egg whites, bananas, sugar, oil and vanilla.
In a small bowl, stir together flour, walnuts, raisins and baking powder.
Stir into banana mixture until well mixed.
Turn into a greased and floured 8 x 4 x 2-inch loaf pan. Bake at 350Β° for 60 to 65 minutes or until done.
Cool in pan 10 minutes.
Remove from pan.
Cool completely on wire rack.
Yields 1 loaf, 16 slices.
