Baked Vegetable Dinner
Baked Vegetable Dinner is an moderately easy dinner. Made with potatoes, carrots, onions, celery and 2 lb. ground beef, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

In the bottom of a small roaster, put a layer of sliced potatoes, a layer of carrots and a layer of onions and celery, mixed.
Brown ground beef and layer this over celery and onions. Pour can of peas (juice and all) over this.
Over the top, put 2 cans of tomatoes; salt and pepper each layer.
Bake at 350Β° for 1 1/2 hours, covered.
Remove the lid and bake 1/2 hour longer.
Do not add any water as the vegetables make their own juice.
