Baked Eggplant
Baked Eggplant is an moderately easy dinner. Made with 1 eggplant, 1/2 lb. ground beef, 1/4 stick margarine, 1 onion, chopped and 1 green pepper, chopped, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Peel eggplant and cut into cubes.
Cook in boiling salt water. Drain well.
Mash eggplant down with a fork.
Brown ground beef in butter with spices, onion and green pepper.
Stir in eggplant and cooked rice.
Spoon into lightly greased Pyrex casserole. Sprinkle with bread crumbs and grated Romano cheese.
Cover and bake at 375Β° for 20 minutes.
