Baked Bluefish Fillets
Baked Bluefish Fillets is an moderately easy dinner. Made with 1/2 c. grated parmesan cheese, 1 c. fine dry bread crumbs, 1/4 c. chopped parsley, 1 1/2 tsp. salt and 1/8 tsp. pepper, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Mix cheese, crumbs, parsley, salt and pepper.
Cut fillets into pieces and dip into beaten egg mixed with milk, then roll in dry crumb mixture.
Cook in hot margarine only until lightly browned on both sides.
Put in shallow baking pan and bake in a preheated 350Β° oven for 25 minutes.
Serve with a little vinegar. (We prefer malt vinegar.)
