Bahamian Fish Soup
Bahamian Fish Soup is an moderately easy dinner. Made with 2 lb. red snapper filet or sea bass (thick filet), 3 oz. salt pork, 3 medium size onions, 1 whole stalk celery and 1 stick butter or margarine, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cut up salt pork into tiny pieces.
Use Wesson oil in small skillet to brown salt pork.
Add salt pork and drippings to 2 quarts boiling water in soup pot.
Chop up onions and celery and add to pot.
Season with butter or margarine, bay leaves, basil, oregano, cumin powder and crushed red pepper to make spicy.
Let boil until cooked.
Cut fish filet into small chunks.
Add fish to pot and let boil 10 to 12 minutes.
Serve over steamed rice. Serves 6 to 8 guests.
