Avocado Sherry Bisque
Avocado Sherry Bisque is an impressive dinner. Made with 2 tbsp. butter, 1 small onion, diced, 2 tbsp. flour, 3 c. fresh chicken stock and 1 tbsp. fresh lemon juice, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Melt butter in a large saucepan.
Saute onion until soft. Stir in flour.
Add chicken stock and cook until thick.
Stir in lemon juice, sherry, garlic, salt and pepper and simmer for 15 minutes.
Blend diced avocados with half and half until smooth. Add to saucepan and simmer for 10 minutes.
Chill and serve garnished with chopped parsley.
Or serve hot.
