Aunt Carmen's 7-up Cake
Aunt Carmen'S 7-Up Cake is an moderately easy dinner. Made with 3 sticks butter or oleo, 3 c. sugar, 5 eggs, slightly beaten, 3 c. sifted all-purpose flour and 1 tsp. lemon extract, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Cream together butter and sugar until light and fluffy.
Add eggs slowly and mix until light and fluffy.
Do not overmix. Reduce mixer to lowest speed and add flour, 1/4 cup at a time. Add extracts and zest of lemon rind.
Stop mixer and fold in 7-Up by hand.
Pour batter into greased and lightly floured Bundt pan or tube pan.
