Artichoke Nibbles
Artichoke Nibbles is an moderately easy dinner. Made with 2 (6 oz.) jars marinated artichoke hearts, 4 eggs, 1/4 tsp. salt, 1/2 lb. sharp cheddar cheese, shredded and 2 tbsp. minced parsley, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Drain marinade from 1 jar of artichokes into frying pan; drain the other jar (save for other uses).
Chop all the artichokes; set aside.
Add onion and garlic to pan; saute until limp.
Beat eggs in a bowl; add crumbs, salt, oregano and hot pepper.
Stir in cheese, parsley, artichokes and onion mixture.
Turn into a greased 7 x 11-inch baking pan; bake at 325° for about 30 minutes until set.
Let cool in pan; cut into squares.
Serve cold or heat in 325° oven for 10 to 12 minutes.
Makes 6 dozen 1-inch squares.
