Artichoke Nibbles
Artichoke Nibbles is an moderately easy dinner. Made with 2 (6 oz.) jars marinated artichoke hearts, 1 small onion, diced fine, 4 eggs, 1/4 c. fine bread crumbs and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Drain marinade from 1 jar artichokes into a frying pan and saute onion until limp.
Drain marinade from other jar and throw out, keeping only artichokes.
Chop into pieces.
In a bowl, beat eggs with a fork, add crumbs, salt, pepper, oregano and Tabasco sauce.
Stir in cheese, parsley, artichokes and onions.
Turn mixture into greased 7 x 11-inch baking pan.
Bake at 325Β° for 30 minutes or until set when lightly touched.
Let cool in pan.
Cut into squares and serve cold or hot.
