Apricot-Pineapple Pie
Apricot-Pineapple Pie is an moderately easy dinner. Made with pastry for 2 crust pie, 1 tbsp. butter, melted, 4 1/2 c. fresh apricots, cut in half, 2/3 c. sugar and 2 1/2 tbsp. flour, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Preheat oven to 425°.
Line a 9-inch pie pan with one crust. Brush crust with butter.
Place a layer of apricot halves over butter.
Combine sugar, flour, cinnamon, tapioca and salt.
Put half of sugar-flour mixture over apricots.
Put half of pineapple on sugar-flour mixture.
Repeat layers.
Pour butter on top. Cover with other crust.
Puncture several times to let steam out. Bake for 10 minutes.
Reduce heat to 375° and bake for 35 minutes.
