Applesauce Gingerbread
Applesauce Gingerbread is an moderately easy dinner. Made with 2 1/2 c. all-purpose flour, 2 c. packed dark brown sugar, 1 c. margarine or butter (2 sticks), softened, 1/2 c. apple juice and 2 tsp. ground ginger, this recipe delivers authentic, satisfying flavors. Preheat oven to 350Β°.
Grease 10-inch Bundt pan.
Into a large bowl, measure all ingredients except confectioners sugar.
With mixer at low speed, beat ingredients until well blended, constantly scraping bowl with rubber spatula.
Increase speed to high; beat 2 minutes, occasionally scraping bowl. Pour batter into pan.
Bake gingerbread 1 hour or until toothpick inserted in center comes out clean.
Cool gingerbread in pan on wire rack 10 minutes. Remove from pan and cool completely on rack. Sprinkle top of gingerbread lightly with confectioners sugar, if you like. Makes 16 servings.
