Applesauce Cake
Applesauce Cake is an moderately easy dinner. Made with 3 c. sifted flour, 2 tsp. baking soda, 2 tsp. cinnamon, 1/4 tsp. salt and 3/4 c. firmly packed brown sugar, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Mix and sift flour, baking soda, salt and spices; mix about 1/2 cup with nuts and fruit.
Cream shortening until soft and smooth, gradually adding sugar, creaming until fluffy.
Beat in eggs.
Add flour mixture alternately with applesauce, beating well after each addition.
Beat in fruit-nut mixture.
Turn into greased pans in moderately slow oven (325Β°), baking about 1 hour. Nuts and dates may be omitted, if desired.
Yield: 2 small loaves (6 x 3-inches) or 1 large loaf (11 x 3 x 3-inches).
