Apple-Raisin Chutney
Apple-Raisin Chutney is an moderately easy dinner. Made with 8 granny smith apples, peeled, cored and diced, 2 c. brown sugar, 2 c. rice wine vinegar, 2 tsp. kosher salt and 2 c. golden raisins, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Reduce sugar and vinegar by half and add raisins.
Add apples and cook for about 5 minutes over medium heat.
Add tomatoes. Cook for another couple minutes.
Strain juice off of apple/tomato mixture, reserve.
Put juice back into saucepan and reduce until it is a light syrup.
Allow syrup to cool.
Add tomato/apple mixture and combine with fresh mint.
