Apple-Leek Soup
Apple-Leek Soup is an moderately easy dinner. Made with 1 lb. leeks (white part), washed and sliced, 1/4 c. unsalted butter or 1/4 c. olive oil, 1 (14 oz.) can chicken broth, 1 lb. cooking apples (mcintosh), peeled, cored and sliced and 1/2 lb. potatoes, peeled and sliced, this recipe delivers authentic, satisfying flavors. Melt butter (or heat oil) in saucepan.
Add leeks, stirring often, and heat 5 to 7 minutes.
Add potatoes, apples and chicken broth.
