Melt 1 teaspoon butter in skillet over medium heat.

Add sausages and cook until brown.

Drain on paper towel.

Reserve. Melt remaining butter in nonstick skillet.

Add potato and onion and cook about 5 minutes to soften.

Add apple and cook 5 more minutes, stirring occasionally with wooden spoon.

Whisk eggs, water and parsley in a bowl, reserve.

After potato mixture has cooked for 10 minutes, add oil, salt, pepper and reserved sausage. Stir and pour egg mixture into skillet.

Swirl pan so that eggs spread.

Cover skillet and cook over medium heat 15 minutes, or until eggs are set.

Remove to serving platter.

Serve immediately. Serves 2 to 4.
