Anadama Bread
Anadama Bread is an moderately easy dinner. Made with 2 c. hot water, 1/2 c. cornmeal, 1/2 c. molasses, 2 tbsp. shortening and 2 tsp. salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Bring water to a boil.
Add cornmeal slowly.
Cook water and cornmeal together for just a couple of minutes.
Add molasses, salt and shortening.
Cook together until ingredients are well mixed. Start adding sifted flour.
When mixture makes a stiff dough, turn onto a floured surface.
Start kneading, adding flour as needed, until dough is smooth and glossy.
Place dough in a greased bowl. Cover, place in warm spot to rise until doubled.
Poke down and let rise once more.
Turn onto floured surface; let relax 10 minutes. Make into 2 loaves.
Place in loaf pans, cover and let rise until about doubled.
Bake 10 minutes at 450°, reduce heat and bake 20 minutes more at 325°.
Cool on rack.
