Alabama Lemon Cake
Alabama Lemon Cake is an moderately easy dinner. Made with 1 c. softened margarine, divided, 1/2 c. shortening, 2 c. sugar, 3 eggs and 3 c. all-purpose flour, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Preheat oven to 325Β°.
In a mixing bowl, beat sugar, shortening and 1/2 cup margarine together until light and fluffy. Beat in eggs, one at a time.
Sift flour, baking soda and salt together and alternately stir in with buttermilk.
Stir in 1 tablespoon of lemon rind and the lemon juice.
Pour into a greased 9-inch pan.
Bake for 1 hour and 15 minutes or until toothpick (when stuck in center of cake) comes out clean.
Cool for 10 minutes, then remove from pan.
