Akara(Bean Cakes)
Akara(Bean Cakes) is an moderately easy dinner. Made with 2 c. black-eyed peas, 1 chopped onion, 1 beaten egg, 1 tsp. salt and 1/4 tsp. pepper, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Soak beans in water for 1 hour.
Rub briskly to remove skins. Grind beans in blender or processor with enough water to make consistency like cake batter.
Add remaining ingredients to bean mixture.
Mix thoroughly and drop by teaspoonfuls into hot oil. Fry until golden brown.
Remove from oil and drain on paper towels.
