Acapulco Eggs
Acapulco Eggs is an moderately easy dinner. Made with 3 corn tortillas, cut in 2-inch strips, 3 tbsp. butter or margarine, 1/2 c. diced onion, 1 can stewed tomatoes and 1 c. diced ham or turkey, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

In large skillet, cook tortillas in butter until golden. Remove and set aside.
Add onion; cook until tender.
Drain tomatoes, reserving liquid.
Add liquid to skillet over high heat and cover; stir frequently.
Stir in tomatoes, meat and pepper; heat through.
Reduce heat.
Add tortillas and eggs.
Cover and cook until eggs are set.
Sprinkle with cheese; cover and cook 1 minute until cheese melts.
