10 Bean Soup is an moderately easy dinner. Made with 1/4 c. each: large lima beans, small lima beans, pinto, red kidney, lentils, split pea, great northern, navy, pearl barley, black-eyed peas, 2 tbsp. salt, 2 qt. water, 1/2 lb. ham or ham hocks and 1 large onion, chopped, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Wash thoroughly beans and place in large kettle.

Cover with water and then add salt.

Soak overnight.

In the morning drain. Add water.

Add ham or ham hocks.

Bring to a boil.

Stir occasionally.

Simmer 2 to 3 hours.

Then add onion, tomatoes, pepper or chili powder, lemon juice and salt and pepper.

Simmer another 30 minutes.

Serves 12.

Better made a day or two ahead.
