Zucchini Vegetable Pie
Zucchini Vegetable Pie is an impressive dinner. Made with 22 snackwell's fat-free wheat crackers, 1/4 c. shredded reduced-fat swiss cheese, 1 c. sliced mushrooms, 1 c. shredded zucchini and 1/3 c. chopped red or green pepper, this recipe delivers authentic, satisfying flavors. Line bottom of greased 9-inch pie plate with 10 crackers. Stand remaining crackers around edge.
Sprinkle bottom with cheese.
In skillet, saute mushrooms, zucchini, pepper, scallions and garlic in margarine until tender.
Spread vegetable in plate. Combine remaining ingredients; pour over vegetable mixture.
Bake at 375Β° for 30 to 35 minutes or until set.
Tent crackers along edge with foil to prevent overbrowning.
