Zucchini Stuffing Casserole
Zucchini Stuffing Casserole is an moderately easy dinner. Made with 4 medium zucchini, sliced, 3/4 c. shredded carrots, 1/2 c. chopped onion, 6 tbsp. butter and 2 1/4 c. herb stuffing mix, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Cook the zucchini in boiling salted water until tender.
In saucepan, melt 4 tablespoons butter and cook the carrots and onion until done. Remove from heat. Add 1 1/2 cups stuffing, soup and sour cream. Gently stir in zucchini.
Turn into casserole bowl. Melt remaining butter and toss with remaining stuffing.
Put on top of casserole. Bake at 350Β° for 30 to 40 minutes. Serves 6 to 8.
