Zucchini Squash Relish
Zucchini Squash Relish is an moderately easy dinner. Made with 10 c. chopped coarse ground squash, 4 c. onions, chopped, 2 tbsp. salt, 2 1/4 c. vinegar (apple cider) and 4 1/2 c. sugar, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Mix squash and onions; sprinkle salt and mix well.
Let stand overnight in cool place.
Drain and rinse with cool water.
Place all ingredients in large kettle.
Bring to boil for 3 to 5 minutes. Cook squash until changes color.
Put in jars; seal.
May add red or green peppers for color.
