Zucchini Soufflé
Zucchini Soufflé is an moderately easy dinner. Made with 1 qt. sliced zucchini, 1 small onion, minced finely (may omit), 2 beaten eggs, 1 c. grated or finely chopped cheese (cheddar is good) and bread or cracker crumbs, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Saute onion and zucchini in a little butter until almost tender.
Stir often; may need to add a bit of water.
Take from fire.
Add eggs and cheese (I usually use a mixture, whatever is in the refrigerator).
Put in buttered casserole.
Sprinkle with bread or cracker crumbs and a little more cheese.
A little paprika will add flavor and color on top.
Bake at 350° until it bubbles and is brown on top.
