Zucchini Relish
Zucchini Relish is an moderately easy dinner. Made with 10 c. grated and drained zucchini, 4 c. onion, chopped, 2 tbsp. salt, 2 1/2 c. white vinegar and 2 tsp. celery seed, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Place grated zucchini, onion and salt in ice water and refrigerate overnight; drain well.
Add vinegar, sugar, celery seed, cornstarch, dry mustard, pepper, turmeric and peppers.
(You can use all green pepper, if you choose.) Stir well and cook 30 minutes.
Pour in 6 pint jars and process 15 minutes in hot water.
