Zucchini Pie
Zucchini Pie is an moderately easy dinner. Made with 1 lb. zucchini, sliced, 2 tbsp. butter or margarine, 1 medium onion, chopped, 1/2 c. fresh bread crumbs and 1/2 c. grated parmesan cheese, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Saute zucchini and onion in 2 tablespoons butter or margarine for 10 minutes.
Mix together the zucchini, onion, bread crumbs, cheese, salt and pepper to taste and the eggs.
Melt butter or margarine in large frypan.
Pour in zucchini and egg mixture and cook without stirring until bottom is set.
Put frypan under broiler to cook the top.
Serves 6.
