Zucchini Pie
Zucchini Pie is an moderately easy dinner. Made with 4 c. thinly sliced zucchini, 1 c. sparsely chopped onion, 1/2 c. butter, 1/2 c. parsley and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cook zucchini and onion in butter until tender.
Stir in parsley and spices.
Blend together eggs and cheese and stir in vegetable mixture.
Separate crescent triangles and place in an ungreased 11-inch quiche pan.
Press over bottom and up sides. Pour in egg-vegetable mixture.
Bake at 375Β° for 18 to 20 minutes. Let stand 10 minutes before serving.
