Zucchini Pie
Zucchini Pie is an moderately easy dinner. Made with 4 c. sliced zucchini, 1/2 c. brown sugar, 1/4 tsp. cinnamon, 1/4 tsp. nutmeg and 1/2 c. white sugar, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Cut zucchini in half; peel and take out seeds.
Slice 4 cups and cover zucchini slices with boiling water.
Let set in warm water for 5 minutes.
Drain well (dry).
Add remaining ingredients to zucchini.
Mix all these ingredients well.
Put in pie shell. Dot with 2 tablespoons oleo and sprinkle 3 tablespoons lemon juice over.
Put on top crust.
Bake at 450° for 15 minutes.
Turn temperature down to 375° and continue baking for 40 to 45 minutes.
