Zucchini Pickles
Zucchini Pickles is an moderately easy dinner. Made with 2 lb zucchini, 1/3 lb onion, 1/4 c canning salt, 2 c sugar and 2 tsp mustard seed, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Wash zucchini and cut in thin slices.
Peel and cut onions in quarters, then slice very thin.
Add to zucchini.
Sprinkle salt over vegetables; add cold water, enough to cover.
Let stand for 2 hours.
Bring all ingredients to boiling point and heat for 5 minutes.
Pack hot into hot jars, remove air bubbles.
Process for 15 minutes in a boiling watter bath.
Makes about 4 half pints.
