Zucchini Pickles
Zucchini Pickles is an moderately easy dinner. Made with 2 lb. small zucchini, 2 small onions, peeled and sliced, 1/4 c. salt, water and 3 c. white vinegar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Slice zucchini and onions; cover with water and add salt.
Let stand 3 hours.
Combine remaining ingredients; bring to a boil. Pour over slices and let stand 2 hours, then bring syrup and zucchini slices to a boil for 3 minutes.
Process 5 minutes in hot water bath.
Makes 3 pints; double recipe makes 3 quarts.
