Zucchini Nut Bread
Zucchini Nut Bread is an moderately easy dinner. Made with 3 eggs, 1 1/2 c. sugar, 3/4 c. vegetable oil, 1 tsp. vanilla and 2 c. coarsely grated zucchini, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Beat the eggs until frothy.
Beat in sugar, vegetable oil and vanilla; mix until thick and lemon color.
Stir in zucchini.
Add flour, cinnamon, baking soda, salt and baking powder; mix well. Add chopped nuts.
Coat two loaf pans (8 x 4 x 3-inch) with nonstick cooking spray.
Bake at 350Β° for about 50 minutes.
Let cool in pan for 10 minutes before removing onto wire rack.
