Zucchini Flan
Zucchini Flan is an moderately easy dinner. Made with 2 tbsp. butter, 3 tbsp. chopped onion, 6 firm zucchini, 1 c. heavy cream and 2 egg yolks, lightly beaten, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Melt butter in large skillet; add onion.
Cook, stirring until onion is wilted.
Trim and discard ends of zucchini; slice into thin rounds and add to skillet.
Cook briefly; stir.
Spoon mixture into buttered casserole.
Blend cream, egg yolks, egg and nutmeg.
Add salt and pepper to taste.
Pour mixture over zucchini.
Sprinkle with cheese.
Bake at 350Β° for 30 minutes or until custard is lightly set.
