Zucchini-Feta Casserole
Zucchini-Feta Casserole is an moderately easy dinner. Made with 3 small zucchini, grated, 3 eggs, 6 scallions, chopped, 1/2 c. chopped fresh mint and/or dill weed and 1/2 c. chopped parsley, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Mix zucchini, eggs, scallions, mint, dill, parsley and cheeses.
Add flour slowly, mixing well.
Season with salt and pepper (cayenne).
Grease a 9-inch baking pan with one tablespoon of margarine.
Pour zucchini in and dot with remaining margarine. Bake 45 minutes at 450Β° until well browned.
Cut into squares. Serve hot or cold.
Makes six to eight servings.
