Zucchini-Chip Omelet
Zucchini-Chip Omelet is an moderately easy dinner. Made with 3 tbsp. butter or margarine, 1 medium onion, thinly sliced, 1 clove garlic, 2 lb. zucchini, coarsely grated and 1 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Preheat oven to 350Β°.
In large skillet melt butter and saute onion garlic until golden brown.
Remove garlic. Add zucchini, salt and pepper.
Cook, covered, 5 to 7 minutes until zucchini is fork-tender. Beat eggs with milk and cheese. Combine zucchini mixture in 1 1/2 quart casserole. Sprinkle with potato chips and paprika.
Bake about 20 minutes until firm and set.
