Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 1 medium zucchini, 1 lb. can tomatoes, drained or 4 fresh tomatoes, 1 can mushroom soup, 1/4 c. butter and 1 medium onion, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Butter baking dish.
Slice zucchini into 1/2-inch slices. Parboil until it changes color; let cool slightly.
Blend together soup and melted butter.
Layer zucchini, tomatoes (sliced), thinly sliced onions, sauce and half of the cheese; repeat.
Bake at 350Β° for 1/2 hour.
