Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 1 (6 oz.) pkg. cheddar cheese slices, 1/4 c. (4 tbsp.) butter, melted, 3 c. rye bread cubes, 4 c. thinly sliced zucchini and 2 tbsp. onion flakes or minced, this recipe delivers authentic, satisfying flavors. Cut extra long slices of cheese into 3 equal portions (this makes 12 slices).
Pour melted butter over rye bread cubes; mix thoroughly.
Grease a 1 1/2-quart casserole.
Alternately place layers of zucchini, onion, tomato, pepper, cheese and bread cubes in casserole.
Sprinkle with salt and pepper.
Repeat process twice, ending with bread cubes.
Cover; bake in moderate oven (350Β°) for 1 hour, or until vegetables are tender.
Serve hot. Makes 6 servings.
