Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 6 1/2 c. sliced zucchini (3 to 4 medium), 3 tbsp. olive oil, 1 medium onion, sliced, 1 clove minced garlic and 28 oz. can diced tomatoes with juice, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Saute zucchini in 1 tablespoon oil until soft (not mushy), then set aside.
Saute onions and garlic in 2 tablespoons oil until soft.
Add next 5 ingredients and simmer, uncovered, for 10 minutes.
Put zucchini in 9 x 13 pan and cover with tomato mixture; stir.
Top with stuffing.
Sprinkle on Parmesan cheese.
Cover and bake at 350Β° for 20 minutes.
Top with Mozzarella and bake for 10 minutes.
