Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 6 c. unpeeled zucchini, sliced 1/2 inch thick, 7 tbsp. butter, 1 c. shredded carrots, 3/4 c. chopped onions and 3 c. herb seasoned stuffing bread cubes, this recipe delivers authentic, satisfying flavors. Cook zucchini slices in boiling, salted water until tender. Drain.
In saucepan, melt butter (5 tablespoons).
Add carrots and onions; saute.
Remove from heat and add 2 cups bread crumbs and remaining ingredients.
Fold in zucchini.
Spoon into 3-quart casserole.
Melt remaining butter and add to dish.
Sprinkle with remaining bread crumbs over top.
Bake at 350Β° for 30 to 40 minutes.
