Zucchini Cake
Zucchini Cake is an moderately easy dinner. Made with 3 eggs, 1 c. salad oil, 2 1/2 c. sugar, 2 c. grated raw zucchini (unpeeled) and 3 c. unsifted flour, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Beat eggs until foamy.
Gradually beat in oil and sugar.
Add grated zucchini and cinnamon, salt, baking powder and soda.
Mix well.
Blend in flour.
Mix well after each addition.
Fold in nuts.
Pour into greased cake pan (or large Bundt pan) or 3 loaves.
Cook in 350Β° oven for 1 hour.
Cool completely.
Dust with confectioners sugar.
Good with cream cheese.
