Yellow Squash Casserole
Yellow Squash Casserole is an moderately easy dinner. Made with 2 lb. yellow squash, 2 eggs, 1 onion, grated (optional), 2 c. thick white sauce and 1/2 lb. sharp cheese, shredded, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Cook squash until tender. Drain and mash into fine pulp.
Add beaten eggs, onion, grated cheese and white sauce.
Cook in a double boiler 1 hour.
Place in a 2-quart casserole together with bread crumbs and bake at 375Β° until crumbs brown.
(Can cook in double boiler the day ahead, then bake later.)
Makes 8 to 10 servings.
