Yellow Squash Casserole
Yellow Squash Casserole is an moderately easy dinner. Made with 1 lb. fresh squash, 2 tbsp. melted margarine, 1 well-beaten egg, 1/3 to 1/2 c. grated cheddar cheese and 1/3 c. milk, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Cook squash in salted water until tender.
Drain and mash. Combine with other ingredients and pour into greased casserole dish.
Bake, uncovered, at 350Β° for 30 minutes (or until browned). You may sprinkle extra cheese on top if desired.
You may also add 1 large onion, chopped, and cooked with squash, if desired. Serves 4.
