Winter Carrot Casserole
Winter Carrot Casserole is an moderately easy dinner. Made with 4 1/2 c. carrots, sliced, 1/2 c. mayonnaise or salad dressing, 2 tbsp. chopped onion, 2 tbsp. prepared horseradish and 1/4 c. crushed saltine crackers (7), this recipe delivers authentic, satisfying flavors. In saucepan, cook carrots, covered, in boiling salted water 10 minutes (until tender); drain.
Place in 1-quart casserole. Combine mayonnaise, onion, horseradish, salt and pepper.
Spoon over carrots.
Mix crumbs and butter; sprinkle atop.
Bake, uncovered, in a 350Β° oven 30 minutes (until hot).
Makes 4 to 6 servings.
