White Clam Sauce
White Clam Sauce is an moderately easy dinner. Made with 1/4 c. olive oil (vegetable is okay), 1/4 c. butter or margarine, 1 or 2 large cloves garlic, minced, 1/2 c. water and 1/2 c. chopped parsley, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Heat oil and butter in skillet.
Add garlic; cook until lightly browned.
Cool slightly. Add water slowly.
Stir in parsley, salt, pepper and oregano. Blend flour with enough clam juice to make a smooth paste. Stir in. Add clams and clam juice. Cook and stir over medium heat until slightly thickened.
Makes about 3 cups.
This is very rich so a little goes a long way.
